Tiramisu

So after being in Italy and trying tiramisu a few times-- wanting to like it but not enjoying the coffee flavor, I came up with an easy wonderful tiramisu of my own.  It is fast and very pretty.


Lorna's Tiramisu


24 ladyfinger cookies (I got mine at Pirate O's, Ferrara brand)
1 1/2 cups hot water
6 tablespoons Stephens Gourmet Hot Cocoa, chocolate cinnamon flavor hot cocoa mix
1 1/2 cups heavy cream
1 bar (8 oz.) cream cheese at room temperature
3/4 cup sugar
1/2 teaspoon vanilla
Chocolate shavings 


Mix cocoa mix into hot water, let cool
In a mixer blend together the cream cheese and sugar
Add the heavy cream slowly, add the vanilla
Beat for 2 minutes until thick and fluffy
Quickly dip ladyfingers into the cooled hot chocolate and cover the bottom of a dish  (a footed glass dish looks the best if you have one, otherwise use a square glass pan or whatever you have)
Spread 1/3 of cream mixture and repeat layer of ladyfingers dipped in hot chocolate and then cream, ending with the cream mixture
Sprinkle with chocolate shavings and refrigerate for at least 2 hours or up to 2 days


For a more festive look, serve with a few raspberries or strawberries as garnish on each plate

I'm excited to try this because like you, I'm not crazy about the coffee flavor which overpowers the whole dish. It's tough to believe it could be this easy!
