Patrick's New Diet

Patrick got his tonsils out last Monday. He has been pretty sick all week, laying on the couch and not talking much at all while taking pain meds and anti-biotics. The surgery went well and it was a good thing he got them out as they were filled with infection. He lost 8 pounds in 8 days eating a steady diet of gatorade, chocolate pudding and drinkable yogurt. Today he started to eat some solid food but his stomach is rebelling. The doctor told me that we only need our tonsils until we are about 4 years old--then they are worthless and shouldn't give us trouble. Unfortunately some people have trouble. Mitchell had his out pretty young and Mark had his out when he was 29. I remember spending the day at the hospital all day waiting for Mark to come out. I have always had a fear of anesthesia and was worried about him. The nurses said I couldn't see him. I waited and then asked again. They still said no and I persisted and said, "I can't believe a wife can't visit her husband". They looked shocked and said, "We thought he was 15!" I told them he had three kids too.

Marshmallow Brownies

1 cup butter, soft

2 cups sugar

1/2 cup cocoa

1/2 teaspoon salt

Mix together well

Add to mixer:

4 beaten eggs

1 tsp. vanilla

1 1/2 cup flour

Spread in greased cookie sheet or pan --I like a jelly roll pan.

Bake 20 minutes @ 350 degrees.

Pour 16 oz. bag of marshmallows over brownies and return to oven just long enough to melt them slightly.

Frosting

4 T. cocoa

7 T. milk

1 stick butter (1/2 cup)

Bring to a boil for 1 minute

Add:

1 box confectioners sugar (one pound)

1 tsp. vanilla

Whisk together and pour over hot marshmallow brownies and let them cool.

My new neighbor Pam Roberts gave me this recipe and it is so good. You could add chopped roasted almonds to make them Rocky Road Brownies.

Hawaiian Bar-B-Q Recipes

Here are the recipes I used for the Winspear shindig.

Chow Mein

1 Tb oyster sauce

1/2 cup chicken broth

2 Tb soy sauce

2 tea sesame oil

1 tea sugar

1 tea fresh ginger, grated

2 tea garlic, minced

2 cups shredded cabbage

1 1/2 cups bean sprouts

3 green onions, cut up

1/2 cup red pepper, diced

2 carrots, grated

2 packages ramen, cooked 3 minutes without seasoning packet

Add first 7 ingredients for sauce.

Add cooked ramen and vegetables to frying pan with a little oil. Cook for 3 minutes stirring and then add the sauce and cook until everything is coated. Serve hot or cold. You can add cooked chicken.

Coconut Sticky Rolls

12-15 frozen Rhodes rolls

1 can coconut milk

3 Tb sweetened condensed milk

3/4 cup sugar

Place rolls in a 9x13 greased pan. Stir milks and sugar together. Let the rolls rise until double, but halfway through rising carefully drizzle all the milk mixture on top of the rolls. Continue to let the rolls rise until double. Bake at 350 degrees for 25-30 minutes.

Grilled Pineapple

1 fresh pineapple cored and sliced into spears, rings, or chunks

3 Tb honey or brown sugar

3 Tb melted butter

Teriyaki Chicken

5 pounds chicken tenders

1 cup brown sugar

1 3/4 cup soy sauce

1 tea sesame oil

2 Tb fresh ginger, grated

4 cloves garlic, minced

1 diced onion

Marinate chicken over night or for at least 2 hours. Bar-b-q.

Coconut Rice

1 1/2 cups jasmine rice

1 can coconut milk

dash of salt

1 Tb sugar

Add water to required amount in rice cooker.

Aunt Kathy with cousin Rand Winspear (the one responsible for all of this and the father of seven boys including the groom, only one was missing)

Uncle Jimmy Winspear - not a very good picture but I wanted to include him since he is the one really responsible for the group. He and Aunt Louise did a great job having a wonderful family.

We had a great time last week with the Winspear Clan as they all came to Utah for Dillon and Jane's wedding. They came from Minnesota, Florida, Arizona, Idaho, California, Washington, Nevada and Utah. We had a house full of wonderful guests and the rest were spread out among the Slaughters and a few hotels. We had so much fun together. I wonder why they all don't live in Utah! The wedding was on Friday and then we had the whole group including Jane's family at our house for a bar-b-q on Saturday. There were more than 60 people here, the most we have ever had. It was so much fun to see everyone getting to know each other better. In the late afternoon the competitive spirit of so many boys/men (I still think of the Winspear boys as boys, even you Chris) took over in the form of a barefoot soccer game. With Shad, Nate, Patrick and Kevin representing the Browers and three generations of Winspears along with a Call, the game was a blast to watch. Patrick did a standing backflip when his team scored and Not-To-Be-Out-Done-Nate did a back side flip the next score. Amanda came in and showed that this was not just for guys and then after a couple of hours Brooke came in and showed us how it's done with a score to end the game. I really don't know who was on what team though. Jeff broke his big toe early on in the game but played through the pain to the finish. He left here with his wife for an Alaskan cruise. I hope he can walk. He has a picture of it on facebook and it looks pretty knarly.

The lunch consisted of Teriyaki Chicken, Coconut Rice, Chow Mien, Coconut Sticky Rolls, Grilled Pineapple and Marshmallow Brownies for dessert. So many people wanted the recipes that I will put them on the next post.

One of My Favorites

This is a picture I found at my Grandpa's funeral. I had to have it, so I took it and planned to get copies made but never did. These are the first four grandchildren of Anna and Orion Packer--my oldest cousin Allen and then Tammy, Shelly and I are 2 months apart. The funny thing is if you know us at all you will be able to pick out who is who. I think we all look like our dads. Our moms are sisters.
